Shiver me Timbers – It’s a Seaweed Infused Rum!

Wales isn’t often the place you associate with pirates but Jonathan Williams, founder of a new, seaweed-infused rum Barti Ddu, thinks we should.

The Pembrokeshire Beach Food Company, which focuses on infusing biscuits, condiments and beer with dried seaweed, supplies a range of delis, cafes and shops across the country, as well as further afield to countries such as Japan and Norway. Marks & Spencer even stocked their seaweed biscuits. “The addition of rum to our collection now allows us to branch out into restaurants and pubs, so it’s an exciting time for us. It’s been even more popular than we anticipated!”

All the seaweed used for their products is collected by hand from the local coastline. “There’s such a wide variety of seaweeds out there – we collect grass kelp, dulse, nori, etc, but the most popular is the laver seaweed, which is known in Wales as ‘Welshman’s caviar”.

“During the winter months, there is less seaweed around due to the number of storms, so it’s harder to source the seaweed. Today I went out for about 2 hours and collected enough seaweed for a small batch of rum. After we collect the seaweed, we take it to get washed in our large jacuzzi-like washer. The seaweed then needs to dry for hours in a dehydrator, before it’s ready to be infused into the rum. Getting the correct infusion time and blend of spices into the rum took some time! My missus and I drank a lot of salty rum over the course of a year!”

Best drank neat, with a splash of ginger ale and a slice of orange, or as a hot buttered rum, the taste is said to have warm notes of caramel, vanilla, cloves and orange.

And what’s next for the Pembrokeshire Company?

“We are now, working furiously on perfecting a naughty ‘adult’s only ice cream’. We want to use the rum to infuse the ice cream, we’re still in the experimental phase, but we hope to have it ready for summer.” We hope so too, Jonathan!
