How to prepare fish for shallow frying
1. Place some flour in a tray and season with salt and pepper. Mix together well.
2. Place a portion of fish into the flour and cover.
3. Remove the fillet, shaking off any excess flour.
4. Place a pan onto the stove. Drizzle with olive oil and heat.
5. Put the fish in the pan fish skin side up. cook for 2-3 minutes, depending on thickness.
6. Turn over and repeat.
7. When cooked and opened, the flesh should be slightly opaque.
