Megrim

Megrim (also known as Cornish Sole) is a deep water, left-handed flatfish with an oval body, similar to lemon sole.  This fish can also be identified by its large, distinctive eyes on the top of its head.

It is pale pink in colour and has delicious, soft meat and a thin skin which can readily be crisped when fried, grilled or roasted. In Spain, megrim is particularly prized but in the UK this delicious fish is still underused – this is beginning to change! Megrims are caught by trawlers using modern, selective fishing gear to reduce bycatch.
