Ling
Ling is a member of the cod family, and with its long slender body that can grow to 2m in length, it could be described as a cross between cod and a conger eel! The flanks are lighter with brownish blotches and the belly is white. The fish has a delicious, firm white flesh that takes flavours well and can be used in a wide range of dishes.
Ling is usually only available as fillets and is often sold salted and dried. The fish also works really well battered, so is an excellent alternative to cod when ordering your fish and chips! Ling caught by inshore day boats using gill nets are best.
